Apple and Coconut Cake


A clean and fresh cake for the whole family


Cake Ingredients

  • 500g apples, peeled and cored
  • 1/4 cup lemon juice
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup coconut oil
  • 1 cup linseed meal
  • 3 cups almond meal

Cheese Icing Ingredients

  • 375g smooth ricotta
  • 3 tablespoons pure maple syrup
  • 2 tablespoons lemon juice
  • Zest of 1/2 lemon
  • 1 teaspoon vanilla extract


  1. Preheat oven to 160 C. Grease a cake tin.
  2. Blend apples, syrup, juice, coconut oil and vanilla in a high power blender until smooth.
  3. Transfer to a bowl and fold in linseed and almond meal. Pour into cake tin.
  4. Bake for 45mins – 1 hour, depending on your oven. Skewer should come out clean.
  5. Meanwhile fold cheesecake icing ingredients together. Taste and add more maple or lemon to your taste if needed. Set aside in the fridge.
  6. Allow cake to cool before icing. Sprinkle with berries and lemon zest to serve.
